Organising by practice type is a sensible response to how differently legal work bills. A litigation practice bills hourly against matters that run for years, a conveyancing practice bills fixed fees per transaction, and a personal injury firm works on contingency and bills nothing until a case resolves. Those are three different financial models, and software presenting one billing approach forces two of the three to work around it.

Contingency work in particular breaks conventional billing software, since the firm carries cost for months or years with no invoice raised, and what needs tracking is disbursements and time toward an eventual settlement split rather than billable hours to send monthly.
